Good Eats Wednesday: Lemon Herb Rice Pilaf

Lemon Herb Rice Pilaf

From Maui Rathfon’s cookbook

Ingredients:

4 Tbsp butter

1 sm onion chopped

1 c. celery chopped

1 tsp garlic minced

¾ c. orzo pasta

1 ¼ c. white long grain rice

4 c. chicken broth (or water with bouillon)

juice of 1 small lemon

grated rind of 1 small lemon

parsley, salt, pepper, butter (to taste)

Directions:

Sauté the onion and celery in butter until translucent. Add the garlic and orzo pasta and sauté until golden. Add the rice and stir for about 2 minutes. Add the chicken broth, lemon juice and lemon rind. Bring to a boil. Reduce the heat to a dull simmer and cover. Cook for about 20 minutes or until water is absorbed and rice is tender. Taste and add butter, salt, pepper and parsley as desired!

This is a good side dish to fish or chicken and veggies!

Good Eats Wednesday: Custard Pie

The Easiest Custard Pie Ever!

From Maui Rathfon’s cookbook

Ingredients:

2 c. milk

¾ c. sugar

½ c. biscuit mix

4 eggs

¼ c. butter or margarine

1 ½ tsp vanilla

Directions:

Combine all ingredients together and beat for 3 minutes. Pour into a greased 9 inch pie pan. Let it sit for about 5 minutes. Add whatever fruit you like (peaches, raspberries (or any berry), coconut etc.). ! Bake for about 40 minutes at 350.

We love this pie because the makes its own crust! It is especially good chilled! This pie made with coconut is our favorite!

Good Eats Wednesday: Bayou Chicken Pasta

Bayou Chicken Pasta

From Maui Rathfon’s cookbook (and Taste of Home Family Collection)

Ingredients:

1 c. chopped onion

1 c. chopped celery

½ c. each of chopped green and yellow pepper

3 Tbsp olive oil

1 lb. boneless skinless chicken breasts, cubed

2 tsp garlic powder

1 16 oz jar salsa

1 Tbsp cornstarch

1 Tbsp water

1 T parsley flakes

½ tsp salt

¼ tsp hot pepper sauce

hot cooked pasta

Directions:

In a large saucepan on medium heat, sauté onion, celery, and peppers in oil until crisp-tender. Add the chicken and garlic powder. Cook until done. Stir in the salsa. Combine the cornstarch and water and stir well. Add to the chicken mixture and stir well. Let it cook for about 2 minutes until it’s thick. Then add the parsley, salt and hot pepper sauce. Serve over pasta!

*This is really good with grated cheddar (or any cheese) on top too!

Good Eats Wednesday: Dark Chocolate Cookies

Dark Chocolate Cookies

From Maui Rathfon’s cookbook

Ingredients:

1 c. unsalted butter, cubed

1 ¼ c. sugar

2 eggs

½ c. cocoa powder

2 ¼ c. flour

¼ tsp salt

1 tsp baking powder

2 ½ c. chocolate chips (or preferred type)

Directions:

Cream the butter and sugar together. Add the eggs. Combine the dry ingredient together and stir them into the wet ingredients. Pre heat the oven to 350. This recipe makes about 12 large cookies. You can make them smaller if you’d like. Bake them for about 16-20 minutes for large cookies and less time for smaller ones!

Free Carpet

Hi Friends, 

We have a off-white piece of carpet that is cut to the exact size of our Wymount living rooms that is available for anyone that wants it. It has some stains on it, so it isn't the most beautiful, but it is nice to have softer carpet for babies to fall on, or even just to have non-church-type carpet. Anyway, we're giving it away for FREE to the first person that claims it. Just text me or Adam (208) 240-0325 or(720) 937-7305. We have to be out of our Wymount apartment at the latest by May 3rd, so, we will throw it away probably May 2nd. 

We're also giving away a custom-made Wymount-window-size screen/window. It makes it so you can have one of those window air conditioners on the bottom of your window, and then still slide open the top part of the window and have a screen there. It's really nice actually to have, cause then you can use the AC if you want, or just open the window and enjoy the breeze. Anyway, first come first serve for this one as well!
